Recipe Tag: Lime Leaf Lentils

Steph over at Moobear designs tagged me for a recipe game. It goes like this…


* I post a recipe here and tag four people.
* They choose an ingredient from my recipe and post a recipe using that ingredient on their blog, linking back to the previous blog that has posted the recipe.

So I’m choosing Chilli from Stephs Aji. to make an absolute favourite recipe of mine, Lime Leaf Lentils. I’m trying to eat more legumes at the moment which I find tircky but this recipe is an absolute winner – vegetarian, gluten free, low GI… all of which is good but what I really like is the taste. Lime leaves, chilli and coriander give it an asian spin that is quite simply YUMMY.


Lime Leaf Lentils


1 tablespoon Oil
4 medium red chillies, chopped
2 tablespoons shredded ginger
5 kaffir lime leaves
1.5 cups of red lentils
3 cups of veg or chicken stock
1/2 cup coriander leaves
1 cup thai basil leaves
steamed green beans to serve


Heat the oil in a frying pan over medium heat. Add the chillies, ginger and lime leaves and cook for 1 minute. Add the lentils and stock to the pan, coo for 5-6 minutes or until the lentils are cooked but firm. Place the beans serving bowls and top with the lentils, coriander and basil leaves.

  1. OMG we love lentils too… This is perfect I have loved this game so much!! And you get a black cross for being late with your recipe. You will have to stay back and do extra work to make up for it!! :op

  2. cool I’m a good person to tag because I ALWAYS have red lentils in the cupboard and make a mean lentil bolagnese! I’ll have to break hubby’s no carb diet on the weekend and whip up a batch!
